Vegan Chunky Oatmeal Raisin Cookies (Levain Bakery Style)

So my friend had been going on and on about these oatmeal raisin cookies from a bakery called Levain bakery, I hadn't heard of it, because I live in a vegan world where I only seem to know bakeries that have vegan options 😂 selfish I know. BUT anyway he kept telling me how amazzzzing they are and that I have to try to make them vegan. NOW I don't know what they taste like, but I can say that these taste absolutely DELICIOUS and he gave it a super thumbs up and said it really does have the same flavor and feel...YAYYYYY!!!



Serves: 10-12 large cookies

Prep time: 20 minutes

Cook time: 12-15 minutes

Total time: 35 minutes


INGREDIENTS


1 cup Cold Butter chopped into cubes

1 cup brown Sugar

2 Egg replacer - with 3 tbsp water not 2 per egg ( like the pack says)

2 cups Gluten free flour or all purpose flour

1 cup rolled Oats

1 tsp Cinnamon

1 cup Raisins

½ cup Walnuts

¾ tsp Baking soda

½ tsp Baking powder

½ tsp Salt



THE MAGIC

  1. Preheat oven to 400f

  2. Add butter and sugar into a bowl and cream together until light and fluffy ( you can use a hand mixer or use a fork!)

  3. Add in the egg replacer and mix together

  4. Add the remaining ingredients and gently fold together into cookie dough

  5. Let the dough chill in the fridge for about 10-15 minutes

  6. Separate dough into large balls and place on lightly colored cookie sheet. Lightly press on top of dough to smooth out. The dough makes 8-12 extra large cookies.

  7. Bake for 10-12 minutes or until golden brown on the top. Let them rest for at least 10-15 minutes to set before eating
