SPAGHETTI LASAGNE
This dish is brought to you courtesy of my dear mother in law! She has been making this for Jay and his sister for years and they absolutely love it, and soooo do i! So i thought i would give it a go...it's actually one of my favorite ways to have pasta i find spaghetti is a lot lighter to eat you get more sauce cheese veggie to pasta ratio which i love!

🥗 I N G R E D I E N T S
10 oz gluten free brown rice spaghetti
1 tbsp olive oil
2 cup finely chopped zucchini
1 1/2 cup finely chopped carrots
1 cup green beans finely chopped or broccoli or peas!
1 tsp salt
1 tsp oregano
1/2 cup fresh parsley chopped
1/8 tsp hing
1-2 cup grated cheese (Depending on how indulgent you wanna go haha)
Sauce
2 tbsp olive oil
2 red peppers roasted
3 cup tomatoes crushed
15 basil leaves
2 tsp oregano
1/4 tsp hing
2 tsp sugar
3 bay leaves
1 1/2 tsp salt
1/8 tsp hing
2 tsp dried parsley

🌿 T H E M A G I C
Preheat oven to 450F
Boil water in large cooking pot and cook pasta
Place peppers onto a baking tray and spray with oil, place in oven and roast for 15 minutes till browned on the outside
meanwhile, add oil to a pan and add vegetables, place lid ontop and cook at low heat so its a little steaming action going on too! cook till soft but not soggy!
Cut the roasted pepper in half and remove all seeds from the inside and peel skin off the outside
add peppers, tomato and basil leaves to a blender and blend till smooth
Add olive oil to a pan and pour in the sauce, and the rest of the ingredients, simmer at medium heat to allow flavors to marinate
Once the spaghetti is cooked, drain and rinse with cold waster
In your cast iron pan or a baking dish add 3/4 of your spaghetti, pour a little of the sauce and mix into the spaghetti, next layer the veggies, sauce, cheese then repeat...spaghetti, veggies, sauce and lastly cheese. Sprinkle some mixed Italian dried herbs on top
Bake in the oven for 15 minutes or until the cheese has browned and melted
Serve warm and with a little chilli oil or hot sauce if ya fancy!!!
