Orange Cardamom & Almond Nankathai 'biscotti'

Diwali treats Special 3 of 3!! Nankathai is basically an Indian cookie. I REALLLY love these cookies especially with the orange almond twist...sooooo tasty. I also gave you two options ( that i discovered by chance) a chewy cookie and a biscotti style, all just with the change of butter quantities, i recommend you make a batch of both..they really taste and feel like completely different cookies! 🥗 I N G R E D I E N T S
1 cup chickpea flour (besan)
1/2 cup light brown sugar or coconut sugar
1/2 tsp baking soda
1/2 tsp chai masala
1 tsp cardamom
3-4 apricots dried chopped (optional)
1 tbsp non dairy unsweetened yoghurt
1/4 -1/3 cup butter (1/4 for biscotti style cookies and 1/3 cup for chewy ones that spread when baked!)
1 tsp almond essence
1 tbsp orange zest ( zest of one orange)
shaved almonds to top
🌿 T H E M A G I C
1. Preheat oven to 390F
2. Sieve the besan flour into a mixing bowl, add the baking soda, chai masala, cardamom and chopped apricots and stir
3. Add in the butter, yoghurt, almond essence and orange zest and give it a good ol mix till combined and it forms a ball
4. Place in the fridge for 10 minutes
5. Take the dough out of the fridge and use a small cookie scoop and place onto a baking tray lined with parchment paper
6. Top with shaved almonds and bake for 8-10 minutes at 390F
7. Once cooked and golden brown in color take out of the oven and let them cool a little before you eat
