OK I grew up for me 'burger night' only meant one thang..MEXICAN BEAN BURGER! I absolutely love a wholesome Pattie of veggies and lentils and pulses. This is a quick and easy sweet potato black bean burger with a chipotle mayo and a zesty fresh corn, jalapeño salsa...NEED I SAY MORE!?

🍽 S E R V I N G S

4 burgers

🥗 I N G R E D I E N T S

2 tbsp oil

1 heaped cup cabbage

⅛ tsp asafoetida

1 cup chopped sweet potato

½ tsp salt

1 tsp cumin powder 2 ½ cups black beans

1 tsp chipotle powder

1 tbsp tomato paste

5 jar jalapeños

¼ cup chopped loosely packed cilantro

¼ cup chopped loosely packed parsley

🌿 T H E M A G I C

1. Heat oil and add cabbage and asafoetida, sauce on medium heat for a couple of minutes

2. Add sweet potato, salt, and cumin powder. Saute for 2 -3 minutes then cover with lid and Cook until soft, approximately 10 minutes.

3. Add black beans, chipotle powder, and tomato paste into the pan. Cook for 5 minutes with a closed lid.

4. Add burger mixture, jalapeños, parsley, and cilantro into a food processor and pulse till combined, the mix doesn't need to be completely crushed, I quite like having whole beans in there too ( you can also just mash with a potato masher or hands..get durrty!)

5. Add sauces of choice but I would recommend the chipotle mayo and corn salsa 😊
