OK so just imagine a mango lassi, condense it, dry it out and THIS IS WHAT YOU'D GET! It does taste absolutely delightful! A perfect little treat for you mid afternoon snack with a cuppa, a quick nibble if you're in a rush for breakfast OR if you have guests coming over these little bites are a quick easy little treat for them!

Prep time: 10 minutes

Total time: 10-15 minutes

🥗 I N G R E D I E N T S

1/2 cup chopped dried mango

1 cup cashews

2 tbsp coconut cream powder (if you don't have this it's ok :))

1 tbsp maple syrup

1/2 tbsp non dairy milk

1 tsp cardamom

1 tbsp coconut oil - (add 1/2 tbsp extra if it doesn't come together in the food processor)

pinch of saffron

🌿 T H E M A G I C

  1. Add the cashews to a food processor and pulse till finely ground

  2. Next heat the milk a little and add in the saffron ( this helps release the color and flavor of the saffron!)

  3. Next, add the rest of the ingredients and pulse till it all comes together

  4. Roll them into balls, you may need a little coconut oil on your hands if the mixture is a bit sticky ( whatever size ya fancy, i like to keep them bite sized)

  5. Put them into an air tight Tupperware/container and place in the fridge for 5 or 10 minutes before eating. They will keep in the fridge for a week , but i very much doubt they will last that long!:)
