CANNELLINI BEANS AND TOMATO SOUP |V|GF|

This is a seriously comfort food vibe! Thick and creamy soup with a grilled cheese sandwich...

🍽 S E R V I N G S

Serves 2 people


🥗 I N G R E D I E N T S

2 tbsp oil or butter

¼ asafoetida

2 bay leaves

½ cup chopped celery

440g cannellini/white beans

¾ cup coconut milk

2 ½ cup boxed crushed tomatoes

1 tsp salt

1 tbsp nutritional yeast


🌿 T H E M A G I C

1. Using a heavy bottom cooking pot, heat up the vegan butter, add the chopped celery, asafoetida & bay leaves. Sautè for a couple of minutes till they start to sweat and soften

2. Add the cannellini beans, coconut milk, tomatoes, salt, nutritional yeast & coconut milk

3. Let the mixture cook for 15-20 minutes

5. Blend until smooth. Serve with some YUMMY, GOOEY grilled cheese.
