Basically autumn is my favorite season and so this is a recipe to celebrate us coming into this new season :)! The colors and ingredients TOTALLY remind me of Autumn leaves, also these are all autumn seasonal ingredients :)! I use a special grater to create the matchstick shape, its different to a grater and i really love having the utensil, it makes a salad look a little more special and its not a pricey gadget either!

🍽 S E R V I N G S 6-8 servings

Prep time: 10 minutes

🥗I N G R E D I E N T S


1 cup Fennel grated or using a julienne/matchstick grater

1 cup Beetroot grated or using a julienne/matchstick grater

1 cup carrot grated or using a julienne/matchstick grater

1/4 cup toasted sunflower seeds


2 tbsp olive oil

1/4 cup lemon juice

2 tbsp non dairy yoghurt

1 tsp mustard

1 tbsp agave/maple syrup

1/2 tsp salt

1 tsp black pepper

1/4 tsp hing/asafoetida

- Julienne Grater ( around 15-25 dollars on amazon!)

🌿 T H E M A G I C

  1. Add all salad ingredients to a bowl and mix

  2. Add all dressing ingredients to a jar and give it a good shake

  3. Pour dressing over salad and mix
