ASPARAGUS, ZUCCHINI, AND FENNEL |V|GF|

Just hearing the ingredients can't you feel spring coming!? This is such a lovely simple light soup, super easy to digest and just cleansing to yo colon! All 3 vegetables are so unoffensive to all body types 😂...like the least offensive vegetables..like you know that friend who's just cute and kind and doesn't get bothered by much..THIS SOUP IS TOTALLY THAT FRIEND 💁🏻💁🏻 kind to all body types and digestion!

🍽 S E R V I N G S

Serves 2 people


🥗 I N G R E D I E N T S

1 ½ medium chopped zucchini

2 cups of chopped asparagus

½ cup fresh fennel chopped

2 tbsp Miyoko's vegan butter

⅛ tbsp asafetida

2 bay leaf

1 ½ tsp salt (per taste)

⅓ heaped cup cashews

1 cup water

🌿 T H E M A G I C

1. In a heavy pot, over medium heat melt the vegan butter

2. add the fennel & asafetida, saute for 2 minutes

3. Add asparagus, zucchini, bay leaf, salt, cashews, and water

4. Place lid on and cook on medium heat for 15 minutes until vegetables are super soft and mushy

5. Using a blender, puree the soup till creamy and smooth

6. I recommend serving warm with a drizzle of REALLY good quality olive oil, a sprinkle of black pepper and a stick of bread
