APPLE STREUSEL MUFFINS

I know i know, its like I have a streusel obsession...but TRY tell me these muffins are better without it, go on try..YOU JUST CAN'T BECAUSE IT IS NOT TRUE.

The buttery pecan streusel topping really adds so much fun to these lil cute muffins. Then we have the almond butter maple glaze which really adds richness to it and then the apple make the inside so moist..all together they are basically a dream. You can have them for breakfast, tea time, coffee time, cuddle time...anytime really!

Serves: Makes 12 muffins

Prep time: 15 minutes

Cook time: 20 minutes

Total time: 35-40 minutes


🥗 I N G R E D I E N T S

Muffins

dry

1 1/2 cup oat flour

1 1/2 cup almond four

1 tsp baking powder

1/2 tsp baking soda

1 tsp cinnamon

1 tsp pumpkin spice (or extra cinnamon)

wet

2 apples grated ( about 2 cups)

1/4 cup vegan butter or extra virgin coconut oil melted

1/2 cup non dairy milk

1 tsp vanilla extract

2 flax eggs ( 2 tbsp flaxseed meal + 6 tbsp water)


Pecan streusel

1/4 cup almond flour

1/4 cup oat flour

1/4 chopped pecans

1/4 cup coconut sugar

1/4 cup melted vegan butter or extra virgin coconut oil


Glaze

3 tbsp almond butter

1/4 cup maple syrup

1 tbsp extra virgin coconut oil

🌿 T H E M A G I C

  1. Preheat oven to 375F

  2. Add all dry ingredients for muffins into a bowl

  3. Prepare flax egg by mixing water and flax meal and set aside for a couple of minutes

  4. add all wet ingredients into a smaller bowl and when flax is thick and gloopy add into the wet ingredients and mix

  5. add wet ingredients into dry ingredients and mix (the mixture will be thick)

  6. Set aside and make streusel mix by simply adding all ingredients into a bowl and mix. it will resemble wet sand

  7. Spoon mix into your muffin tray or cases

  8. Bake in the oven for 15-17 minutes or until golden brown

  9. Meanwhile, make your glaze by mixing all ingredients in a bowl

  10. Once the muffins are done, take them out and let them cool inside the tray for about 10 minutes, then drizzle with the glaze

  11. Store in airtight container at room temperature for 2-3 days
